Cooking a rack of lamb does not have to be complicated. Rosemary, garlic, and a little technique is all you need!

You’ll love this lamb rack cooked for a quick 10 mins in a high-heated oven. It is sure to be a crowd-pleaser!

INGREDIENTS:

200g frozen minted peas
40g butter softened
½ lamb rack (approx. 4 bone)
1tbsp olive oil
200ml veal or lamb stock
1 clove garlic
1tsp rosemary sprigs
1tsp caster sugar
